We're adopting a dog, but my cat won't be too happy about it. Advice?

YES, we will be installing places she can hide/get out from the dog in any room, but I'm still nervous. We'll be doing introductions by the book, we'll be testing resource guarding temperament and work through it, we'll ensure that even when my cat (Pebbles) has zoomies he won't chase her or think it's hunting time. We're also going to be hiring a trainer to help the process go as smoothly as possible, installing baby gates, Pebbles will have her own room all to herself, etc.

However, a lot of times the dogs available haven't been thoroughly cat tested more than just the "doesn't lunge at it" type thing when one is around. We've also applied to adopt a dog from overseas rescues from the meat trade, and some day cat friendly but some of the profiles on some dogs are super bare.

I've been careful, looking at videos of the dogs, carefully reading their bios, etc to make sure they're not reactive. One dog we applied for is a small/medium sized hunting breed who was supposed to be a squirrel hunter but is scared of squirrels. Another from overseas is a golden retriever who looks SO POLITE and is so smart, but I know even some goldens, especially rescues, can have issues with cats.

I just don't know what else we can do, or how to ease this anxiety.
