How to entertain an Egyptian Mau?

We got a cat from the shelter about a year ago, she was just listed as a generic tortoiseshell Tabby. However, after a day or so of having her, we could tell that was immediately not the case. She is very active and very alert, demands to be entertained and is extremely inquisitive and always moving.
She does not respond to discipline like not jumping on counters and scratching on things. She's not content with just staring out a window, but needs to be active. She loves kids, after the initial stress of a new person. She's constantly dragging things around, digging, trying to make new stimulii for herself. I've taken care of cats my entire life and I've never had an animal like her before. I'm worried she still not getting enough stimulation, as she frequently asked out and demand attention in a variety of surprising ways. We have a nice cat tree and lots of toys and big windows for her to look out of, and I'm afraid that's just not enough. I work a ton and my partner is chronically unwell and not able to get on the ground and play with her all day. Anyone have any suggestions how to entertain this precious psycho?
