Cats that are friendly to each other keep getting in fights when chasing each other

Hello! My boyfriend and I adopted two cats, Peanut (male, 5 years old) and Mazzie (female, 5 years old) about a week and a half ago from a shelter. They were in the same room and got along using the same litter box/food while at the shelter. They got into a small spat (no hissing) at the shelter when we were in the room with them giving them affection, but we've made sure to pet them at the same time, and that has solved that issue.

They ultimately do get along well--we have multiple litter boxes for them, and they constantly use the same one, they often give each other nose boops, and often hang out in the same areas together. However, Mazzie is extremely playful and this becomes an issue when she chases Peanut and he gets scared and fights back. This turns into a hissing fight. When this happens, we try to seperate them, but it doesn't last long because they're soon meowing at the door or even darting into the other room.

This isn't a territory issue or issue of not getting along. We play with Mazzie between 2 and 4 times per day, but this is still happening. Any advice?
