Foster cat suddenly plays with his poop

My roommate and I started fostering a kitten in December (6 months old when we got him). He has been slowly warming up to us. He is comfortable roaming the apartment, but he is very skittish. About 2 weeks ago, he started pulling poop out of his litter box and batting it around like a toy when we aren't around. He has multiple toy balls (of varying size and material). We are obviously trying to keep the litterbox SUPER empty, but if he goes to the bathroom while we're sleeping or out of the apartment, he WILL pull it out of the box (which has a lid and door) and play with it. It is extremely gross. Has anyone experienced this before? Any tips, other than getting a litterbox that he has to enter from the top?
