How can I get my cat to be more open to my family?

My cat (April Susuwatari, yes she is a black cat if you know what susuwatari means) used to be a stray before she was picked up in New York and brought to a humane society where my family adopted her. We picked her because she was very kind and open to us, and she let us rub her belly. However, once we got her settled in the house she only was super loving to me. She’s the sweetest cat I’ve ever met. doesn’t bite or claw, but she’s awfully skittish and if I walk to fast she goes as fast as she can up the cat tree in my room. She avoids any contact with any of my family except for me and my Dad (he gives food). She allows my mom and my sister to pet her, and maybe she’ll purr, but she really just wants a treat. When I’m sick, she sits on the bed with me all day, and cuddles and purrs. She doesn’t do that to anyone else. When I come home either she’s somewhere in our basement or in my room on my bed waiting for me. The only place your allowed to interact with her is when she’s in my room. If I carry her to another room, or to show to my mom in her room, she splays her claws out and flails about until I’ve let go or she’s jumped out of my room. Our first floor is purely her way of going to get food or go to the basement. She won’t stop to say hi, and runs up the stairs or to the basement. She runs from everyone. She also knows how to open doors (the kind that don’t have a latch with a handle you don’t need to turn to open it) and uses it. She sticks one of her paws under the door and pulls. Whenever we try to get her to at least act more comfortable with us, she escapes. I love her so much but she is so skittish. I wish she would socialize more.
