Cat rapid weight loss, runny stool, and aloof

Hello, I have a male cat (about 12 years old) who in the passed month has rapidly lost weight and has had frequent bowel movements that are fairly liquid. His condition has improved in terms of his bowels (in the past, he was puking and also having completely liquid movements), however, his weight seems to continue to drop despite feeding him more often than we used to.

When we increased his wet food (friskys) he gained weight but has since lost it. We've tried giving him food from a vet-specific "science diet" but he refused to touch it. We also were given prednisone for him, but he also refuses to take that, unless we smear some in a high-calorie gel on his fur.

He has gotten more aloof than usual, yet more lovey when he wants attention. Sometimes I cannot even adjust. I suspect this may be on the colder nights, as he has gotten down to about 7lbs. He was a small cat to begin with, being at about 9lbs to begin with.

We want to get blood samples, but he does not react well with needles, and the vet is very hesitant to put him under to get a blood sample.

I suppose my question is: How could I go about increasing his weight? Would kitten food (with its higher fat content) improve his weight gain and not disrupt his bowel movements more?

Extra information:

This is a two-cat household, the other is a female that is 13, and is doing fine. No change in behavior.

Our house is currently under construction, and there has been a lot of drywall work going on, and a lot of noise. However, this has been going on for over a year.
