newly adopted cat extremely scared of us

I had adopted a 11 month old cat from a rescue house, they had gotten her just within the two weeks I had a adopted her. The rescues house told us that she’s been in the shelter since she was 3 months and that she had also been fostered too (however we don’t know how long). Also don’t know if she was feral before put into the shelter. We decided to pick her even tho she was extremely scared in the cage, every time we would reach to pet her she would hide unlike the rest of the cats there. But we saw her curious to play with toys and her being really gentle, so we adopted her. It’s been a bit more than a week now, she is still extremely scared of me and everyone else in the house. She runs away from me and hides under the bed or table. I did get the chance to pet her for a bit (even started to purr) with a liquid treat she loves. She even sometimes is really curious to explore the living room/rest of the apt. I’m just worried she’s always going to run away and stay scared. When we give her treats her eyes would close and ears go to the side, she’s so scared. But comes close to us to eat the treats from the pack. We can only get close to her with the treat. She just hisses a lot if we come super close to her too, but doesn’t attack. When she started purring while I pet her, I think she gets carried away and realizes that we are there than gets scared/runs off. I’m worried she will always stay away with us and hiss ? She seems confident in the environment already.
